We are really enjoying our new winter menu. It has so many new yummy meals for us to try. We didn’t want the cooking to end, so we decided to take it outside and make mud cakes from things we could find in the garden.
Banana and Blueberry Muffins
Ingredients
8 Medium Bananas
4 eggs
300ml water
220g wholemeal self raising flour
440g self raising flour
8g baking powder
500g frozen blueberries
Method
1. Preheat the oven to 180C and grease mini muffin trays
2. In a large bowl combine flours and baking powder and set aside
3. In another bowl whisk eggs
4. Add mashed banana and water to the eggs
5. Fold the flour mixture into banana mix – do not over mix
6. Gently fold in blueberries
7. Spoon mixture into muffin trays
8. Bake for 15-20 minutes or until golden brown
